The Restaurant   The Chef - John Snelling

  • The Outpost Restaurant was originally an old farmhouse that was built in the early 1900’s and owned by four families before John and Barb Snelling purchased the property in 2003 to pursue their dream of having ‘fine dining’ in the country.

With seating for up to 100 people, The Outpost Restaurant can cater for any occasion.  It is the perfect venue for weddings as you can get married in the beautifully landscaped gardens and then sit down to a magnificent lunch or dinner, cooked by John (previously one of Melbourne’s finest chefs) and his team.  You can enjoy the views from the wide verandahs and indulge in outside dining in the warmer months or nestle in next to the open fire place when the weather turns cool.  The rustic charm of the restaurant is a delight to the eyes.

From December 2009 the restaurant will take on a new focus.  It will become the regions first Bistronomic venue!  Bistronomy is the art of good eating and drinking and is where you can enjoy fabulous food and wine in a relaxed atmosphere.  This new funky style will allow for a change in direction and menu, moving away from the previous a la carte style restaurant.

The Outpost Restaurant is the perfect venue for mid week group functions and can easily cater for tour groups such as Probus Clubs and tourist buses.  The Outpost Retreat is a fully accredited tourism business and is also very proud to have retained a Chef’s Hat (for the third year).  It is one of two businesses in the Gippsland region to be awarded a Chef’s Hat.

 

John Snelling has worked at a number of International Class restaurants over the years, including 13 years at Cafe Di Stasio in St Kilda, where he was the head chef for 7 of those years.  John and his wife Barb purchased The Outpost Retreat in July 2003 and have worked very hard to bring the restaurant to the level that it is operating at today.  All food and desserts are cooked on the premises and the menus are focused predominantly on local produce.  John’s passion for the area is evident in his food.  He travels many kilometres each week and spends hours on the phone sourcing local produce.  At present the menu is 90% local.  Each dish has a component of local produce or wine in it, with many dishes being fully local.
John was the winner of the 2008 Gippsland Signature Dish competition held at Lardner Park and is now regarded as one of the most highly regarded Chef’s in the region.
Through the efforts of John, Barb and the team at The Outpost, the restaurant has now retained its Chefs Hat award for the third year and has been the winner of multi tourism awards including the 2008 Tourism Restaurant & Catering Services award at the Melbourne Airport Victorian Tourism Awards.

Restaurant opens Friday, Saturday for lunch and dinner and Sunday for lunch.
Restaurant will open for bookings for over 30 people on any other day by arrangement.
